Raw Vegan '"Creamy Coconut Curry Soup" Recipe

Here's a quick easy soup if you're not intimidated by opening a young coconut.

Whole Foods does sell them already opened if it seems to daunting for you.

"Creamy Coconut Curry Soup"
(this recipe is for 1 person)

1 young coconut (meat & water)
1/2 Tbsp organic curry powder
1 Tbsp organic hemp oil
1 tsp organic coconut aminos
1/2 tsp garlic granules
organic cayenne to taste (optional)
Real Salt or Himalayan salt to taste
2 leaves organic baby bok choy - chopped
3 Tbsp shredded organic carrots
3 Tbsp chopped organic green onion or scallion
3 Tbsp diced organic red, yellow or orange bell pepper

Pour the water from the coconut in a high speed blender and add the coconut meat, blend with curry powder, hemp oil, coconut aminos, garlic granules, cayenne and Real Salt until creamy. Pour in your bowl stir in the rest of the veggies.

Enjoy!

Blended Raw Vegan Soup Recipe "Spicy Tomato"

We'd like to share this soup recipe we created about 9 years ago after being raw for a year and while we were working at the Go Raw Cafe.

"Spicy Tomato"
(ingredients for each person - if making for 2, double ingredients, etc...)

4 organic tomatoes
1/2 large organic zucchini or 1 small organic zucchini
1/2 organic red bell pepper
1/2 large organic avocado
1 Tbsp hemp seeds
4 or 5 soaked organic sundried tomatoes
1 clove organic garlic or organic garlic granules to taste
organic cayenne powder to taste
organic Mexican or taco seasoning to taste
Real Salt or Himalayan salt to taste (optional)

Blend in food processor or blender.

If you'd like to add more greens, a handful of organic arugula is great or if you's like it sweeter you can add 1/2 of an organic carrot shredded, too.

Enjoy!
